Dinner
It's been cold and rainy here in San Diego this past week, so I fixed a big pot of chicken tortilla soup. Yummy!

Recipe: 1 onion, chopped 2 Serrano peppers, chopped garlic (as much as you want) minced 1 large can diced tomatoes plus liquid 1 10 oz can chicken broth 3-4 chicken breasts, cooked and shredded 2 16 oz cans sweet corn 1 16 oz can black beans 1 medium zucchini, sliced 1 tsp cumin 1 tsp Worchestershire sauce 3 Tbsp cilantro salt and pepper Saute onion, peppers and garlic in oil. Add to stock pot containing water. Add rest of ingredients and simmer 15-20 minutes. Garnish with avocado, tortilla chips and cheese.
I hear the rain started the day I moved!! That looks delish and makes me miss San Diego more than ever!
